I was raised to be a picky eater. I can go on and on about the things I was not allowed to eat. I remember the pure joy I felt when there was finally a McDonald’s in our area. It wasn’t even in our town, it was a 10-15 minute drive away in the next town over. It opened around the same time I got my driver’s license. Not only could I drive, but my friends and I had a place to drive too. The timing was nothing short of miraculous for a suburban teen. It was also around the time they introduce the culinary delight we know and love as chicken nuggets.
The chicken nugget was a welcome retreat from meals at home for the same reason that they are a common dinner choice for many families today. My mother didn’t know how to cook. In fact, she hated to cook. She would strategize how to cook meals without actually being in the kitchen. Usually, that meant chicken breaded and thrown in a baking dish to be put in an oven and left there until someone happen to notice the time had gone off.
These days, I’ve moved beyond the 6 piece with honey mustard. I’ve figured out how to cook nutritious meals for my family that we all enjoy. Well, almost all of us. With three kids, I consider a low volume of complaints a successful meal and I’m sharing those recipes with you.
